I bought myself the Fagor LCD Lux (8 quart) back in December for a fun treat – I love kitchen gadgets and tools and after reading so much about multicookers on Facebook, I decided to give one a try. I bought the Fagor instead of the more well-known brand because it received higher ratings on several review sites that I trust. So far I have had pretty good success with most of my projects. I know I whine about the altitude a lot, but pretty much every recipe needs almost 50% more time than I expect. Which in turn means many of the recipes need additional water. This weekend I tried a version of “egg bites” – somewhat like those you can buy now at Starbucks (which I love!). It’s basically like a steamed egg cupcake… I used spinach and sundried tomatoes, chopped up very small and placed in the silicone cups first. Then I blended together eggs, cream, cheese, and some cream cheese. In the future, I would maybe skip the cream cheese? Or use the plain yogurt I’ve been making (also in the magic cooker!). They turned out super delicious, and with just four eggs, I made 11 egg bites (one serving is basically 2, or 3 if extra hungry). We ate 5 and froze 6. Fun and delicious! And super fast in the magic cooker – and easy clean up.
